eating my vegetables: roasted brussels sprouts (uh, with a little bit of bacon.)

Add some heat.  And get this--


This is why I love cooking.  (Well, besides my love of eating.)  It's like a science experiment and usually the experiment has favorable results.

The "Recipe":
brussels sprouts
center cut bacon
extra virgin olive oil
salt and pepper

Cut brussels sprouts in half.  (I think I had around a dozen.) Take a few slices of bacon and cut in large equal chunks.  (I used 4 slices and cut them in sixths.)  Place on a cookie sheet.  (If you want easier clean up, cover cookie sheet with foil.  I was too hungry and didn't.) Drizzle a tablespoon of olive oil over the top and sprinkle with salt and pepper. Toss gently.  Roast at 400 degrees for 20 minutes, tossing everything after 15.  Remove brussels sprouts from the cookie sheet and return bacon to the oven as it won't be cooked through.  Roast bacon until it's done to your liking -- I prefer crispy!  Toss everything back together when the bacon is done and sprinkle with more salt and pepper to taste.  I ate this for lunch but of course it would make an excellent side dish.  Super easy and you can make more or less depending on how many you are serving.  And to you (brussels sprout) haters, I simply say that if you don't like brussels sprouts, you've been eating them the wrong way.

  1. I have kind of an obsession with brussles sprouts. I think I've posted about them twice. People just don't know what they are missing!! These ones look great!

  2. One time when our power was out for several days, I went the store for ice to try and save the hundreds of dollars of fish in our freezer. Well, there was no ice so I bought out their entire of stock of frozen brussel sprouts. And then the power came back on and my husband made me eat them. :) I'm not sure if I learned to love them but . . . kinda like for sure.

  4. I've only made brussel sprouts once, and I liked them, but I knew they could be better. Don't know why I've yet to try again, but ever since I saw a post that Danielle did a while back, I've wanted to try! This is an easy way to do it once and for all... We have the bacon, now just need some sprouts!

  5. Well of course you have to have bacon? What kind of world would this be if you didn't. I swear bacon makes everything better but your broussel sprouts look and sounds pretty darn amazing with or without the fat! LOL!

  6. I love your food posts and this actually looks great. I think the bacon would really help offset the bitterness of brussel sprouts. I am hosting a brunch in a couple of weeks so if you have some good ideas for food send them my way :)
