Alli's Haricots Verts
1 pound haricots verts
3 tablespoons extra virgin olive oil
2 tablespoons Dijon mustard
2 teaspoons white wine vinegar (I used red wine vinegar as that's all I had.)
1 shallot minced
juice from half a lemon
zest from one lemon
Steam or boil beans. (I boiled them for 5 minutes.) Whisk together the rest of the ingredients except lemon zest. Add salt and pepper to taste. Toss with beans. Top with lemon zest. Enjoy immediately or serve at room temp. (You can also top with chopped nuts. I think pecans would be fab.)

ReplyDeleteI was just going to send you an email telling you that I tried the last one- zucchini... delicious! Oh- and Rao's too!! Finally broke down and bought a bottle. It is AS GOOD as you say. And I just discovered that my Target does carry it, so I am on a mission to find it discounted.
Had the zucchini last night with pasta and panko chicken tenders... all covered in that delicious sauce- Mmmmm. (and making again right now for lunch!)
Yum...I love haricots verts ;) too bad my son won't be fooled either.
ReplyDeleteWhen we watch "Chopped" I'm always yelling at the TV - "Green Beans! Green beans! Calling them green beans in french doesn't make them any more fancy!".
ReplyDeleteGetting that out of my system, Miss Monks regards anything green with suspicion so changing the name wouldn't get her to eat them, either. I hope having her see her parents eat veggies enthusiastically will at some point help her overcome her aversion. Although I can get her to eat her turnips and black beans, so yay?

Yummy!! "haricot verts" has been a joke in our house since my husband asked a waiter once what they were and pronounced it "haricot verts"...phonetically, not in French. I am not really making any sense..hopefully you get what I mean. :D
